Our kaddu sabji or pumpkin curry recipe was a favourite traditional Kashmiri dish Dad made for my two sons. Warm Indian spices makes this a perfect pumpkin seasons autumn dish.

INGREDIENTS

  • 450 grams pumpkin
  • 2 tbsp ghee
  • 1.5 tsp fine pink salt
  • 1/2 tsp turmeric powder
  • 1 tsp cumin powder
  • 1/3 tsp Kashmiri chilli powder
  • 1/2 tsp cassia powder
  • 1/2 cinnamon quill
  • 1 mace flower

METHOD

How to make our warmly spiced Indian pumpkin curry.

STEP 1

The only prep for this is to skin and finely dice the pumpkin before the cook. Once that’s done…

STEP 2

Turn the kadai to high heat. Add the ghee and all of the spices at once. Stir for a minute or so before adding the pumpkin. Follow the instructions in the video in terms of laying the pumpkin as flat as possible against the base and the sides of the ghee so that it both cooks quickly, and chars slightly. Move it around a little as its cooking to ensure the pumpkin cooks evenly. Serve hot with dal and chapati for a traditional lunch. Toss through a salad. Or serve alongside your favourite roast meats.

Can I make this pumpkin curry vegan?

Yes. We use ghee to make this kaddu sabji because ghee is a delicious and familiar fat used in Indian cooking. Using coconut oil would make this dish both delicious and vegan.

Yes. Using a small amount of ghee or alternative oils to cook pumpkin into a richly delicious vegetarian curry with lots of Indian spices is a tasty and healthy way to eat more vegetables.

What is ghee?

Ghee is made from cream or milk. It is also known as clarified butter. Ghee is rich, caramelised, nutty, and rich in taste. It is a dairy product but is casein and lactose free.

Is ghee a good or a bad fat?

Ghee is a saturated fat. However traditional Indian health and cooking traditions see benefit in using ghee because it is a sattvic food that promotes balance in the physical, spiritual and emotional bodies.
