INGREDIENTS

  • 1 cup black cardamom pods
  • 1/2 cup green cardamom pods
  • 1/3 cup cumin seed
  • 1/4 cup cinnamon quill
  • 1/4 cup dried bay leaf
  • 1/8 cup each mace flower, whole nutmeg, clove buds

STEP 1

Combine all of the spice in a coffee / spice grinder, or thermomix, and blitz until powdered. Store in an airtight container and use within three months.
