INGREDIENTS
- 1 cup black cardamom pods
- 1/2 cup green cardamom pods
- 1/3 cup cumin seed
- 1/4 cup cinnamon quill
- 1/4 cup dried bay leaf
- 1/8 cup each mace flower, whole nutmeg, clove buds

STEP 1
Combine all of the spice in a coffee / spice grinder, or thermomix, and blitz until powdered. Store in an airtight container and use within three months.
