INGREDIENTS
- 3 small-medium potatoes, cut into small cubes
- 4 tbsp vegetable oil
- 1 tsp fine white sea salt
- 2 tsp black mustard seed
- .5 tsp red chilli powder
- 1/3 tsp turmeric powder
- 2 small tomatoes, skin on and diced
- 2 pinches fleur de sel (optional)
METHOD
How to make our punchy and delicious aloo sabji.
STEP 1
Heat the oil in your kadai / cast iron wok / heavy bottomed pot until almost smoking. Toss in the potatoes first—this is a one-stop cook with no produce pre-prep, and so the potatoes need to be fried to tenderness before the masala is added. Taste one. It should be crispy on the outside, and tender on the inside.
STEP 2
Toss in the spices (except the fleur de sel) and stir through until the potatoes are well coated and the masala is no longer raw. This will take a few minutes. You want the black mustard seed to pop and sizzle and the aroma to be strong.
STEP 3
Add the diced tomatoes, being prepared for the sizzle. Stir this through for a few minutes until the tomatoes are fried, the initial sharp sizzle has died down, and the tomato-masala base looks rich. The potatoes will continue to brown and soften. Cook until the oil is minimised. Taste and if it needs a little more kick, add the pinches of fleur de sel.
