SWEET POTATO BHAJI
SWEET POTATO BHAJI MADE DELICIOUS WITH CHILLI MASALA.
Kala namak or Indian black salt in our Chilli Masala makes this spice blend a natural match for fried snacks like these sweet potato bhaji. Use a little mustard oil in the vegetable oil when frying for a bit of extra punch. Vegans—instead of egg, use an egg replacement in order to provide a little extra combining and gloss in the end result.

INGREDIENTS
- 1 sweet potato, grated
- 2 to 3 tsps Chilli Masala
- besan flour to bind
- 1 egg, whisked
- 2 cups vegetale oil for frying
- a few tbsp mustard oil for frying
METHOD
How to cook our sweet potato bhaji recipe.
STEP 1
In a bowl, mix the grated sweet potato with the besan flour and spices until the sweet potato strands are well coated. Tip in the raw whisked egg and mix with your hands. If too wet, add more besan flour until the mix reaches a fry-able consistency.
STEP 2
Keeping your palms slightly damp, roll the mix into small balls and flatten slightly on a tray. At the same time, start heating the oils in a vessel deep enough to deep fry the bhaji.
STEP 3
When the oil is quite hot, deep fry the bhaji in small groups of three to four so that they cook evenly and don’t stick together. Drain on newspaper or paper towel. Serve hot.

What are bhaji?
Bhaji are deep fried snacks, normally combining vegetables and spices and besan flour. They are typically bought off street food carts across the regions of India.
How do you serve bhaji?
Bhaji are often served and eaten on their own with a raita or chutney. However they can be wrapped in unleavened breads alongside salad, akin to falafel.
Are bhaji the same as pakoras?
Bhaji are similar to pakoras in that they involve vegetables, besan flour, spices and deep frying. But were pakoras are usually vegetables fried in chunks, bhaji are often grated and present like hash browns.
What are the best vegetables to make bhaji out of?
Onion is popular. Sweet potato works well with the spices. Potato is also delicious. But any vegetables that can be grated will work. Just watch out for vegetables with a high water content (like zucchini) as these will spit in the oil.
