RECIPE DETAILS

INGREDIENTS
- 1 cup mixed raw nuts
- 2 to 3 tsps Cinnamon Masala
- 2 tsps ghee
- honey to taste
METHOD
How to cook our cinnamon roasted nuts recipe.
STEP 1
Turn the oven to 180 degrees fan forced with the grill setting on.
STEP 2
In an oven tray, mix the nuts with all the rest of the ingredients. Pop in the oven for a brisk three minutes, or until the nuts are just caramelised.
STEP 3
Remove from the oven and tip into a bowl or container from the tray. Allow them to cool a little before eating.

What are the benefits of cinnamon?
Cinnamon is a prized spice in Ayurvedic cooking. In traditional Ayurvedic medicine, cinnamon is said to rekindle a sluggish digestive system, as well as balancing insulin, and serving as a counterpoint to the mucus producing facility of dairy.
Where do you get the best cinnamon?
Cinnamon from Sri Lanka is prized. When buying cinnamon quills or powder, look for a labelling that calls for True Cinnamon.
Is it better to use cinnamon powder or a cinnamon quill?
That depends on the recipe. In terms of traditional medicine, both are considered to be healing. In terms of cooking, the whole cinnamon quill imparts a deeper aroma and a structural quality. Cinnamon powder appears more subtle and warming.
Is there a difference between cassia and cinnamon?
Yes. They are different spices. Cassia appears with more heat and sweetness, and the cassia bark is thicker and less elegant than the delicately spiralled cinnamon quill.
