ONE-PAN STICKY LAMB RIBS.
Lamb ribs are so sweet and lip-smackingly tender—which is why I use them for this sticky lamb rib recipe! This is an easy one-pan recipe that can be cooked in the oven in 20 minutes. Sumac is the star spice. And we use South East Asian sauces for extra sticky yumminess. This could be made with pork ribs, but I’m a sucker for the sweetness of the lamb. And the way sumac’s lime-y, salty tones are drawn forward by all that lamb fat umami.

INGREDIENTS
- 800 gms lamb ribs
- 1.5 tsp fine pink salt
- .5 tsp Kashmiri chilli powder
- 1 tsp fennel powder
- 1 tsp sumac
- 1 tsp fennel seed
- .5 tbsp honey
- .5 tbsp kecap manis
- 1 tsp peanut oil
METHOD
How to make our easy one-pan sticky lamb ribs.
STEP 1
Preheat the oven to 180 degrees fan forced.
STEP 2
In one baking tray, massage all of the spices and the sauces into the lamb ribs. The technique is simple, it’s the thought around the spice selection that tells the story. The video goes into quite a lot of detail around the whys and wherefores of ingredient inclusions.
STEP 3
The lamb ribs take around 20 minutes to cook. Remove them once they’re a little caramelised, bubbly, and sticky. Turn halfway through if you like, though it won’t be a big deal if you forget.

You can use pork ribs for this recipe. If you do choose to use pork ribs, then add 1 tsp of fennel seed, and a half teaspoon of cumin powder to the spices in the ingredient list to account for the difference in taste between pork and lamb.
