- 125 g fresh turmeric
- 2 to 3 tbsp water
- 3/4 cup of almonds
TO THE STOVETOP
- 4 tbsp ghee
- 1 cup besan (chickpea) flour
- 1 cup jaggery powder
- 8 to 10 green cardamom pods, husks cracked
METHOD
How to make our haldi halwa recipe.
STEP 1
Clean and peel the fresh turmeric. In a blender, blend with the water until it forms a smooth past. Reserve in a bowl. In a dry blender, grind the almonds until they are also smooth to make an almond meal or almond flour. Also set aside.
STEP 2
In a large frying pan, heat the ghee until a little browned. Add the fresh turmeric paste to the ghee (on medium heat) and stir. This is the longest process of the cook. The turmeric paste needs to be stirred until the water is excreted and evaporates, and the oil splits the turmeric. This will take about eight to ten minutes and you will need to stir constantly. Turn the heat down to low if the paste starts catching. It will change texture and become a little cake batter-esque. At this point, you are ready to add the net ingredients.
STEP 3
Now add the ground almonds, besan flour, jaggery and cracked cardamom pods. Stir through until well combined, this will take two to three minutes. Once combined, turn off the heat but continue to stir the halwa in the frying pan to ensure it is adequately brought together.
Serve into small bowls, ramekins, or katoris and top with slivered almonds and silver leaf (optional). Serve at room temperature.
