CINNAMON MASALA COCONUT FISH CURRY
Serves: One person per fish fillet.
Prep Time: 2 minutes.
Cooking Time: 5 to 10 minutes.

I’m not a huge fan of fish, but even I love this one pan cook of fish with coconut milk and The Spirit Of Spice Cinnamon Masala. It’s unbelievably rich and fresh and fragrant. If you are on your own and don’t feel like cooking, this is the perfect antidote. If you have a family to feed, increase the fish fillets to the number you need and simply add one teaspoon of the Cinnamon Masala for each fillet of fish.
INGREDIENTS
- 1 fillet of fish
- 1/2 cup coconut milk
- 1 tsp mustard oil
- 2 tsp Cinnamon Masala
- 1 cinnamin quill
In a small pan, place the fish fillet, mustard oil (use sesame oil if you don’t have mustard oil), The Spirit Of Spice Cinnamon Masala and cinnamon quill.
Put on the stovetop and cook on a medium to medium-high heat for around 10 minutes, or until the fish is tender and cooked and the coconut milk has reduced and thinking slightly. You will need to turn the fish fillet halfway through cooking.
If your’e feeding more than one, simple use 1 tsp of Cinnamon Masala for each fish fillet, and increase the coconut milk to cover the fish.
Serve hot with fluffy rice.
