HOW TO PREP FLUFFY RICE

Fragrant and fluffy rice is not an accident: making beautiful Basmati requires a bit of planning and a few simple steps. Rice is a staple in diets across the Indian subcontinent and so getting it right every single time matters enormously. Follow the steps below and find your rice groove. These same tips work for brown rice as well, though the grain of brown rice will not respond quite so beautifully as Basmati. Like any produce, it also helps to begin with the best that you can find: aged, long grain Basmati rice will yield incredible results.

STEPS TO FLUFFY RICE:

  1. Start with a high quality rice. Rinse the uncooked rice repeatedly in a bowl, swishing the rice grains around with your hand to release starch and any dirt or pebbles. Strain. Repeat this step five to six time.

  2. Once the rice has been adequately rinsed leave it in a bowl of water to soak for between 12 to 24 hours on the bench top. The water should amply cover the rice. If you forget to allow this much time, soak the rice for as long as you can. Every minute will make a difference.

  3. Drain the rice of its water once you are ready to cook, and rinse the starch off one last time.
