TURMERIC CUSTARD

TURMERIC POWDER IN DESSERT IS A RICH ADDITION.

I am a HUGE fan of my own butter chicken recipe. But I swear this paneer butter masala recipe nearly beats it. Charred and smoky paneer in a tangy and rich butter masala is dinner heaven, and a great vegetarian option. Paneer butter masala is also known as butter paneer, and paneer makhani.

INGREDIENTS

CUSTARD BASE

  • 2 eggs
  • 1/4 cup caster sugar
  • 1 1/2 tbsp corn starch

ON THE STOVETOP

  • 2 cups milk
  • 1 tsp butter
  • 1/3 tsp vanilla extract

TO FINISH

  • 1 strong pinch flaked salt
  • 1 strong pinch turmeric powder

METHOD

How to make our turmeric custard recipe.

STEP 1

In a glass bowl, whisk together the eggs, caster sugar and corn starch until the sugar and corn starch has dissolved, and the egg is slightly thickened.

STEP 2

On the stovetop in a small pot on low heat, heat the milk, butter and vanilla extract until it is warm but not hot. You should be able to put your finger in the milk without burning or discomfort.

At this point, add the egg mix to the warmed milk mix and mix with a whisk the entire time. Keep the heat low and whisk until the custard thickens to, well, custard consistency. This should take around five minutes. The custard is now ready to eat.

STEP 3

At this point, add the pinches of salt and turmeric powder and whisk through. The custard is now ready to take off the heat. Serve warm over cake or pudding, or transfer the custard to a single bowl or into individual servings and refrigerate a few hours before serving.

Can you taste the turmeric powder in the custard?

A little, in that it flattens out the sweetness of the sugar in the best possible way, and replaces that sweetness with a savoury richness that complements the woody aromatic aspect of vanilla.

What does turmeric powder do to custard?

Turmeric powder creates such lovely structure and contrast within custard. It makes the eggs taste richer, adding a voluptuous and heavy-silk feel to a basic custard recipe.

Is organic turmeric powder better?

Yes is the short answer. Lower quality turmeric powders are more woody and earthy than higher quality and organic turmeric powders. Organic turmeric powder tends to be more nuanced, richer, and savoury with beautiful colour.

What other recipes can I use turmeric powder in?

I use turmeric powder in any recipe at all. It will add structure and shape to both savoury and sweet foods. Obviously a dessert recipe only needs a small amount of turmeric powder. A pinch. More can be overwhelming.
