A LEBANESE ONE PAN ROAST CHICKEN RECIPE THAT WILL ROCK YOUR WORLD.
Chicken Marylands are the key to the making of this one pan roast chicken recipe—the Maryland is the leg attached the the thigh with the skin on and bone in. I’ve tried even with skin on and bone in drumsticks and it’s not as good. Spice wise, it’s all about the contrast between bright acid and darkly shadowed spice. It’s one of my favourite ways to use spice.

INGREDIENTS
- 3 chicken Marylands, skin on
- 1/2 cup olive oil
- 1/3 cup apple cider vinegar
- 1 head fresh garlic, cloves skinned and crushed
- 2 generous tsp baharat spice
- juice of 2 lemons
- 1.5 tsp cumin powder
- 1 tsp fine white sea salt
- 1 tsp fine pink salt
- 1/2 tsp smoked paprika
- 3 carrots, chopped in chunks
- 300 gm potato, chopped in chunks
METHOD
How to make our one-pan roast chicken recipe.
STEP 1
Heat the oven to 180 degrees, fan forced.
STEP 2
In a roasting tin, compile all of the ingredients and massage the oils, vinegar, lemon juice, garlic and spice through the chicken and vegetables.
STEP 3
Roast for around one hour or until the skin is crispy, the vegetables are soft, and the chicken is cooked through and tender. Serve with beautifully steamed asparagus, or salad and rice.

How do I tell if my roast chicken is cooked?
Wait util the skin is crispy and golden and a little tight and puffed up. ONce you can see that, you can start to test the chicken by piercing the breast or the thick part of the thigh with a sharp knife—any juices should run clear. If the juices are pink, keep cooking.
How long does it take to roast a chicken?
It depends on the cut of chicken. A whole roast chicken in a moderate fan forced oven (around 180 degrees centigrade) needs 45 minutes per kilo of chicken, plus an extra 20 minutes. Chicken Maryland take around 60 minutes until golden and crispy.
Do I need to stuff a roast chicken?
Stuffing a roast chicken will also help to keep the chicken moist and add extra flavour. You can buy pre-prepared stuffing from many supermarkets and delis. There are also plenty of recipes online to make your own herb-infused stuffing.
How do I stip my roast chicken getting dry?
Leave the skin on, and use olive oil or ghee or lard or butter on the skin to ensure the bird stays moist. With whole chicken, stuffing butter under the skin of the chicken—between the skin and the breast—will also ensure the chicken is very moist.
