INGREDIENTS
- 1 litre soda water
- 4 plump limes, juiced
- 1.5 tsp Indian black salt
- .3 tsp cracked black pepper
- sugar syrup or fine white sugar to taste
- a pinch of cumin powder
- a pinch of amchur
- fresh mint to garnish
METHOD
How to make our refreshing nimbu soda.
STEP 1
In a large jug, combine all of the ingredients and stir well. Dump in ice to chill, if preferred. Sugar syrup will make the drink more tangy, more salty, more savoury, and more polished—add it small amounts at a time and stir in well before adding more. Too much sweetness will overwhelm the purpose of the drink, which is to present as salty and savoury, and uniquely funky. Serve with a sprig of fresh mint.
