KOHLRABI CURRY IS A SUBTLY SWEET TRADITIONAL KASHMIRI SABJI.

This very simple masala uses coriander powder to create relationship between the peas and the masala—peas as a produce don’t absorb spice in the way of potato or cauliflower. Instead, a spice like coriander powder ensures that the fat and masala base can “stick” to the outside of the pea and ensure flavour carriage with every mouthful.

RECIPE DETAILS

Serves: 4 as part of an Indian meal
Prep time: 10 minutes.

INGREDIENTS

  • 1 heaped tbsp ghee
  • 1 tsp fine pink salt
  • 1/2 tsp turmeric powder
  • 1/2 tsp Kashmiri chilli powder
  • 1/2 tsp ginger powder
  • 1 1/2 tsp cumin seed
  • small piece of jaggery
  • 2 tsp coriander powder
  • 2 cups peas, cooked
  1. Replace ghee with coconut oil for a vegan and dairy free alternative.

METHOD

STEP 1

Boil or blanch your frozen or fresh peas until just cooked. Set aside.

STEP 2

In a large frying pan, heat the ghee and all of the spices together on a medium-low heat until slightly bubbling and aromatic. Add the peas and stir through until well coated. Simmer on a low heat for five to ten minutes. Serve.

Can I make coriander powder at home?

Yes. Grinding the dried coriander seeds is what makes coriander powder. And in fact coriander powder is one of the spices that most benefits from being ground fresh from dried seed. Because the spice is delicate, its aroma fast dissipates.
