Unripe Keralan red bananas make ideal fried green banana chips. Our recipe is simple. Substitute our Keralan bananas with plantains, or even yams. The chaat masala is a delicious seasoning and we explain that recipe below. Season with salt, red chilli powder and fresh lime if the idea of chaat masala feels too difficult.

INGREDIENTS

  • 2 green bananas, sliced
  • 1 cup vegetable oil
  • 2 tbsp mustard oil
  • chaat masala, to season
  • salt, to season

METHOD

How to make our green banana chips recipe.

STEP 1

Heat the oils until very hot in a kadai, heavy bottomed pot, or heavy wok. Add the banana slices in small batches, and fry until golden brown, turning occasionally to ensure they fry evenly.

STEP 2

Once fried, drain on newspaper or kitchen towel. Transfer to a bowl, season with chaat masala and salt, and toss until tasty. Eat straight up.

What are the ingredients for chaat masala?

Fennel seed, coriander seed, cumin seed—these seeds are toasted and ground. Black pepper, ground. Red chilli powder. Dried mint. Amchur. Indian black salt. Perhaps a little white salt. All mixed and ground to a fine powder

What is chaat masala?

Chaat masala is a common masala used to season streetfood and fried foods. It is a blend of around 10 spices, the most prominent being kala namak (Indian black salt), amchur (dried green mango powder), dried mint and red chilli.

Is chaat masala good for you?

Chaat masala has the benefit of being a delicious seasoning made from spices, with all the micronutrient and Ayurvedic benefit carried by those spices. It is a heating blend, and so should be consumed in moderation for those with inflammatory conditions.

What can I buy chaat masala?

Pre-mixed chaat masalas are sold in Indian grocers outside of India, or in grocery stores across India. These will also have stabilisers and some additives. If you can make your own, it will be punchier and more delicious.
