What’s your top tip for using salt and pepper well?

Use more than one. Use two salts in a dish. Three peppers. Or three peppers and two salts. Or three of each! I call this scaffolding flavour. If a dish calls for 1 teaspoon of salt, then break it up into a pinch of flaked salt, a half teaspoon of pink salt, and a third teaspoon of sea salt. Ditto pepper usage. Cracked black pepper tastes different to fine black pepper. Using salts and peppers in multiples ensures your meal is exponentially yummier.

Aren’t we supposed to eat less salt?

Excessive salt intake is clearly not advised. But using salt well means our food is more delicious and more satisfying. Traditional ayurvedic thought is that satisfying food can be eaten in smaller quantities, resulting in weight stabilisation, helping to ensure wellness over a lifetime.

Are all salts the same?

No. Every salt will taste a little bit different because of it’s different origin, and its different mineral and sodium distribution. The size of the salt flakes or grains also affects the taste of salt. As a cheat—pink salts have a salty taste for longer, sea salts will all have an oceanic character, and lake salts will tend to be a little harder than sea salts. The larger the flake of salt, the less evenly it will distribute. The finer the grain of salt, the faster and easier it will dissolve.

What types of pepper are best to use everyday?

Having a good quality black pepper in the kitchen is vital. I keep both fine and cracked black pepper in my kitchen for use together. I also have come to love fine white pepper as an accessory pepper also. Think about keeping a pepper mill in the kitchen that has more than one grind setting .
